Ancient grain meet new recipe. Our Quinoa Oatmeal Berry Parfait is a great way to keep things
fresh at the breakfast table.
Prep Night Before:
Rinse quinoa thoroughly. Strain any excess water and combine in a medium saucepan with oats and 1 cup boiling water. Cover with lid or plastic wrap and leave overnight.
Combine almond milk, salt and nutmeg with quinoa oatmeal mix. Bring to a boil and reduce the heat to low. Stir occasionally until quinoa is tender (10-12 minutes). Add the vanilla and let cool completely.
Combine all yogurt mix ingredients in a medium bowl.
Place ¼ of the quinoa oatmeal mix in the bottom of each glass. Spoon ¼ of the yogurt mix on top of the quinoa mix, then top with ¼ of the mixed berries. Repeat this process with remaining ingredients.
